Green Chile Stew
My version, based on eating it at dozens of New Mexico restaurants and input from Tia Sophia in Santa Fe, who has the best I've tasted. [They make theirs with beef, not pork. Try it with either]. Note: use fresh ingredients wherever possible. If you can't get Big Jim or Anaheim chiles in your local grocery, go on line and order frozen roasted green chiles from Hatch, NM. You can order them mild, medium, or hot. They come roasted and peeled, ready to use. Keep 'em in the freezer [they keep forever] and use them for this and green chile cheeseburgers. I'll post a recipe for green chile sauce for cheeseburgers. -- posted by Steve in Scottsdale

Quahog Chowder
The clam that Rhode Islanders call a quahog possesses an impressive variety of names, and even the word "quahog" has more than one spelling and a number of pronunciations: KO-hog, KWO-hog, and KWA-hog. Indians used quahog shells to make beads that were used as money (called wampum). Although quahogs can be found along the North American Atlantic coast from Canada's Gulf of Saint Lawrence to Florida, these clams are particularly abundant between Cape Cod and New Jersey.
